Reese’s PBC Cupcakes

 

To all the peanut butter-chocolaholics out there- this recipe’s for you! It’s a chocolate cupcake stuffed with a peanut butter cup and frosted with creamy peanut butter icing. This cupcake it decadent, rich, and loaded with Reese’s goodness. 

 

Recipe
1 chocolate cake mix prepared to pkg directions
20 mini peanut butter cups
1 c. shortening
 1 t. vanilla
1 T. water
1 lb. confectioners sugar
1/2 c. creamy beanut butter
 

Prepare cake mix according to pkg directions. Instead of filling a cupcake tin with 24 cupcakes like the pkg says, fill 20 so each cupcake comes out a little bigger. Unwrap peanut butter cups and press one down into each cupcake slightly, so it doesn’t touch the bottom of the tin. Bake according to package directions. Remove from oven and let cool. For the icing, with an electric mixer cream together shortening, peanut butter, water, and vanilla. Gradually add confectioners sugar and continue mixing until icing is smooth and creamy. Frost cupcakes.
