Corona Light & Lime Roasted Turkey

This recipe was inspired by the remnants that were sloshing around in my cooler at the end of the weekend… one Corona Light and a zip-lock bag full of limes. Rather then let them go to waste I decided to introduce them to the whole turkey breast I had in my freezer. Along with some honey, garlic, and black pepper this bird came out pretty tasty. In the picture above I used a 7 lb turkey breast but you could also prepare this using a whole turkey or chicken.

 
Recipe
 
1 turkey breast, whole turkey or chicken for roasting
3 limes
8 oz. beer
1/3 c. honey
2 garlic cloves
S & lots of P
 
Using your hands and a small knife, separate the skin from the breast of the poultry creating a pocket. Cut 1 of the limes into thin wheels. Slice garlic cloves. Rub black pepper and some of the honey inside pocket of poultry, then stuff with lime wheels and sliced garlic. In a bowl whisk together the beer, remaining honey, and juice of 2 limes. Place poultry in roasting pan and pour beer mixture overtop. Tent with foil and bake at 350, basting periodically. Cook time will depend on the size of the bird. (Internal temperature should reach 180 degrees.)
