Grilled Peach and Prosciutto Flatbread

I saw this recipe in a Martha Stewart Living magazine and decided to try it out with my very near and dear camping crew. We are at Ft. Wilderness Campground in Disney World right now!! Martha’s recipe was regular oven baked pizza with grilled peaches… I switched it up and made grilled pizza and baked on the peaches… YUM!

1 pizza crust (I used Pillsbury)
4 oz. proscuitto, sliced into strips
3 peaches
8 oz. shredded italian cheese blend (mozz/prov/parm)
olive oil
Roll out pizza crust, brush with olive oil. Place olive oil side down on grill. Then brush opposite face-up side of crust with olive oil. Allow crust to cook to about it’s half way point. Flip crust over on grill and top with peaches, proscuitto, cheese, S&P. Let cheese melt, remove from grill and cut into squares.
