You see poeple’s capacity for love, courage, and endurance.” ~ anonymous I made these treats to bring into a staff meeting at work today in honor of nurse’s week 5/6-5/12. I am truely blessed to work with such a great group of kind, caring nurses. Love ya 4 Harmony!!
Recipe
1/2 c. butter
1 c. sugar
2 eggs
1 lime
3/4 c. coconut milk
2 tsp. baking powder
1/4 tsp. salt
2 c. flour
2/3 c. premaid cake icing
white chocolate chips
cocnut flakes
Cream the butter and sugar, add in the eggs and juice of lime. In a seperate bowl combine baking powder, salt, and flour. Gradually mix the dry ingredients into the wet ingredients alternating with the coconut milk. Pour into a 13X9 inch pan and bake at 350 for about 25 minutes. Let cake cool completely. Crumble cake into very fine peices either with your hands or food processor. Mix 2/3 c. premaid cake icing with the cake crumbs until it is well combined. Next, form the mixture into ping-pong size balls. Let them chill in the fridge for about an hour. In the meantime, melt the white chocolate chips either in the microwave or with a double boiler. Dip the cake balls in the white chocolate and sprinkle with coconut flakes and lime zest.
