I was fooling around in my kitchen a few weeks ago and came up with this pumpkin hummus. Since then I’ve made it 3 more times- I’m addicted!
1 can chick peas, drained
1 1/2 c. pumpkin puree
1 T. tahini
1 T. olive oil
1 clove garlic
cayenne to tatse ( i used 1 tsp)
In a food processor puree all ingredients, streaming the olive oil in last. Garnish with chopped walnuts. Serve with pitas, veggies, pretzels, or anything else you like to dip.
