Apple Muffins


Yeild 12
1 1/2 c. flour
3/4 c. sugar
1 egg
1 t. cinnamon
2 t. baking powder
1/2 t. salt
1/3 c. vegetable oil
1/3 c. apple sauce
1 apple
2-3 T. conf sugar
drops water
chopped nuts
Blend together the sugar, oil, egg, and apple sauce. In a separate bowl combine the flour, cinnamon, baking powder, and salt. Mix the dry ingredients with the wet. Peel, core, and dice the apple into small pieces then stir it into the batter. Line muffin or cupcake pan with papers and fill each cup about 3/4 of the way full. Bake at 350 for 25 minutes. Let cool. Mix confectioners sugar with a few drops of water until it is a drizzly consistency. Drizzle on tops of muffins and sprinkle on nuts.
