Butterscotch Chip Oatmeal Raisen Cookies

Baking is a great way to say “Thank You.” Rather than flowers or a card… why not give something edible to show your appreciation. I made these cookies for the staff at my Veterinarians office to thank them for their kindness in taking care of my sick pup over the past 2 years. They turned out very yummy- these cookies are your classic Oatmeal Raisens but I added butterscotch chips to make them a little sweeter.

Recipe
Yeild: 3 dozen
1 stick butter
1/2 c. sugar
1/2 c. brown sugar
2 eggs
1/2 t. vanilla
1/2 t. salt
1 t. baking soda
1 t. cinnamon
1 c. flour
2 c. rolled oats
3/4 c. butterscotch chips
1/2 c. raisens
Cream butter, sugar, brown sugar, eggs and vanilla in a large mixing bowl. In a seperate bowl combine flour, baking soda, cinnamon and salt. Mix the dry ingredients into the wet ingredients then stir in the butterscotch chips and raisens. Drop by tbsp-fulls onto ungreased cookie sheets and bake at 350- 8 min for chewy or 10 min for crispy.
