Chocolate Bomb Cupcakes


My hubby is finally home!!! He was away for work for 6 long weeks down in Huntsville, Alabama training to be a Certified Bomb Technician. Today we are having a welcome home BBQ with friends and family. To celebrate his home-coming I made these Chocolate “Bomb” Cupcakes. They are double chocolate cupcakes with a chocolate bomb filling, topped with vanilla icing. Welcome home, Babe!

Yeild: 18-20 cupcakes
1 chocolate box cake mix
4 oz. mini chocolate chips
1 c. chocolate icing
3 cap-fuls chocolate liquor
vanilla icing to frost
Prepare chocolate box cake according to package directions. Stir in mini chocolate chips. Instead of making 24 cupcakes like the box says, overfill 18-20 cupcakes. Paper line cupcake tin and fill them to about 3/4 of the way full. This will allow for a bigger, taller cupcake and more room to later create the pocket to fill with chocolate. Bake cupcakes and let cool. Then, using a mellon baller, scoop out a 1 inch peice from the top center of each of the cupcakes and discard. Mix together the chocolate icing and 3 cap-fuls of chocolate liquor. Spoon mixture into cupcake holes, filling each so it is level with the top of the cupcake. Frost cupcakes with vanilla icing and decorate.
