Mango Salsa

I know most people already make this dish but I decided to blog it anyway because just in case you don’t… it’s not worth missing! This salsa makes a great summertime appetizer and can also serve as a delicious topping for grilled chicken or fish. It’s a little exotic but super easy to make. FYI… if you make it the day before it gives it a chance to meld together and turns out alot better.

 
Recipe
 
1 mango
4 tomatoes
1 small red onion
1 can black beans
1 small can corn
1 jalepeno pepper
1/4 c. cilantro
1 lime
olive oil
lots of salt
S&P
 
Dice the mango, tomatoes, and red onion. Finely dice the jalepeno and cilantro. Combine in a bowl and add black beans and corn. Squeeze juice of lime over top. Drizzle on olive oil and salt to taste. Serve with tortilla chips.
