Cake Pops

Simply put, they are balls of cake, iced, and put on a stick. I first saw these at my friend Laura’s Bridal Shower a few weeks ago… the ladies were going nuts over them! They were delicious- the cake was sweet, moist, and compact… which lead me to wonder how they were able to be formed in to such perfect little mouthsize peices. I asked the baker, a friend of mine from college, and I was so surpised to hear how they were made. She said basically you bake a cake, crumble it up, mix cake icing into it, and form the balls. I decided to try it out to bring to a dinner party and they came out pretty good. I made vanilla cake and dipped them in chocolate, white, and pink and decorated them with rainbow jimmies, coconut, and almonds, respectively. These came out pretty good but you could really mix and match any flavors you like.
Recipe
Yeild: 30
     
1 box cake mix prepared by pkg directions
1/2 c. cake icing
meltable chocolates
lollipop sticks
decorations of your choice
Bake cake mix according to package directions using a 13×9 pan. After the cake completely cools, crumble it to a million peices. You can do this with a food processor or simply by using your hands. Next, mix the frosting into the cake crumbs, working it in until the mixture is well combined. Form the mixture into ping-pong size balls and insert a lollipop stick into each. Let them set in the fridge for about an hour. Melt the chocolate using a double boiler, dip each cake ball, and decorate!!
