The best way to celebrate on New Years Eve is in your pajamas- and by that I don’t mean lounging on the couch watching Dick Clark’s Rockin’ New Years Eve. I mean, in your pajama’s surrounded by family, friends, good food, and good drinks! That is exactly how I rang in 2012. Jimmy and I hosted a house party to which everyone wore their PJ’s and slippers. It was complete with champagne, drinking games, gunfire as the clock struck 12, and even a friendly late-night game of Pictionary. We all had a blast!! And, just because the dress code was downgraded doesn’t mean the food was…. On the menu was Sushi, Bacon Wrapped Shrimp, Filet Mignon Baguettes, Scallop Ceviche, Antipasto, Mini Quiches, Prosciutto Lollipops, and Brie with a Caramel Cranberry and Walnut Topping. Also, I baked up some party favors for my guests to take home (for their pups)…. Banana Peanut Butter Biscotti. Happy New Year!!
Recipe
Yield: 36
3 store bought pie crusts (I used Pillsbury)
12 eggs
1/2 c. cream
1 lb. bacon, cooked and crumbled
4 oz. shredded cheddar cheese
6 scallions
2 T. chopped fresh parsley

In a mixing bowl, whisk together eggs and cream. Stir in bacon crumbles, cheese, scallions, parsley, salt, and pepper. Roll out store-bought pie crust with a rolling pin to make it just a little thinner than it comes. Use a round cookie cutter (about 3 inches) to cut out circles of pie crust. Place each circle into cups of a greased mini cupcake pan. Fill each little crust with egg mixture. Bake at 350 for about 25 minutes.
