Phillie’s Red Velvet Cupcakes


Today I am heading to Citizen’s Bank Park for some tailgatin’ and I’m bringing along these Red Velvet Cupcakes to show my team spirit. For this recipe I actually choose to use a box cake mix for one reason- I can’t bare to add the obscene amount of red food dye that it takes to make red velvet cake red. I mean… I know it’s already in the box mix but at least I don’t feel so responsible for adding all that afrtificial color! Anyway….  Go Phillies!!!

Yeild: 24 cupcakes
1 pkg Duncan Haines red velvet cake mix
3 eggs
1 c. water
1/3 c. vegetable oil
1/2. c sour cream
1 8oz. pkg cream cheese
1/2 c. butter
1 t. vanilla
1 T. water
4 c. confectioners sugar
For the cake, blend all ingredients together until well combined. Pour into paper lined cupcake pans. Bake 350 for about 20-25 minutes. For the icing, cream together the first four ingredients, then slowly add the conf sugar one cup at a time. Frost tops of cupcakes after cooling.
