Mojito Melon Balls

These are melon balls soaked in a mojito marinade. They are sweet, refreshing, bitesize, and seem to be most popular with the ladies. This recipe has been circulating amongst my group of friends for a quite a few summers now… I think originating with Linda who brought them to a picnic one day out on Lower Little Island. Pictured here is my sister’s version. She made them very cute by skewering one ball of each color and adding a lime and mint leaf garnish. You can also simply serve them in a bowl with toothpicks alongside- either way they make a fun and delicious pop ’em!
 
Recipe
 
1 Honeydew
1 Canteloupe
1/2 Watermelon
1 c. Light Rum
1/2 c. Simple Syrup
Juice of 2 limes
Mint leaves
 
Ball melons using a 1 inch melon baller. Place melon balls in a shallow container such as a 9×13 cassarole type dish. Combine rum, simple syrup, chopped mint leaves, and lime juice and pour overtop of melon balls. Cover and allow to marinate in the fridge anywhere from 3 hours to overnight. Serve chilled.
