I had to make something with blueberries to celebrate the birth of my new cousin, Chase Robert Butterick. I brought these yummy bars when I went to visit him and his mommy yesterday. He is the cutest little baby boy, weighing in at just 5 lbs 14 oz. Congrats Lisa and Bob on your bundle of joy!!
Recipe Yeild: 16
Crust-
1/2 c. sugar
1/2 c. butter
1 egg
1/2 t. baking powder
1/2 t. salt
1 1/2 c. flour
zest of 1 lemon
Filling-
12 oz. cream cheese (1 1/2 pkgs)
2 eggs
1 c. sugar
juice of 1 lemon
2 T. flour
1/3 c. blueberries
For the crust, start by creaming together the butter, sugar, and egg. Gradually add in the dry ingredients and lemon zest. The dough will be stiff, similar to cookie dough. Take 2/3 of it and press it into the bottom of a greased 9×9 pan.
For the filling, blend the cream cheese, eggs, sugar, and lemon juice together using a stand mixer or electric mixer until very well combined. Mix in the flour. Pour mixture over crust lined pan. Top with blueberries allowing them to sink in. Take the remaining 1/3 of crust and crumble on top. Bake at 350 for 35-40 minutes. Let cool, then cut into 16 squares.
