Orzo Salad with Sundried Tomatoes Chick Peas and Feta

I hope everyone made it through last week’s dog days of summer! I enjoyed making this Orzo Salad to go along with dinner last Thursday. It was perfect for a hot summer night. I used sundried tomatoes because I had them on hand but I think it would also be tasty using just plain grape tomatoes or better yet… Jersey Tomatoes! Stay cool out there!!
Recipe
1/2 lb. Orzo
1 can chick peas
10 sundried tomatoes
7-8 leaves fresh basil
1 clove garlic
2 oz. crumbled feta cheese
1/2 bottle italian salad dressing

Boil orzo until tender, strain with collander, and let cool. Julienne the sundried tomatoes and basil leaves. Mince the garlic. Combine cooled orzo with tomatoes, basil, garlic, salt, pepper, and salad dressing. Add the feta cheese last so it does not become overly crumbled while mixing the rest. Serve chilled.
