Apple Cake

This is my Mom’s signature. She has been making this apple cake as far back as I can remember. It’s delicious- it has that crisp on the outside moist, dense, sweet on the inside thing going on. It works well as a dessert or breakfast cake. It’s very easy to make and it will turn out great everytime…. but of course not as good as when Mama makes it :)

2 c. sugar
4 eggs
1 c. vegetable oil
3 c. flour
3 t. baking powder
1 t. vanilla
1/4 c. orange juice
4 apples
Blend together the sugar, oil, eggs, OJ, and vanilla in a large bowl. Mix in the flour and baking powder. Peel, core and slice the apples, then toss them in a seperate bowl with the cinnamon to coat. Grease a bundt pan. Place 1/3 of the apples around the bottom of the pan and then pour in 1/3 of the batter. Repeat this two more times to make 3 layers. Bake at 350 for 1 hour.
