Grilled Chicken Salad with Pecan Encrusted Goat Cheese

I love love love chic food but no offense I hate going to any kind of women’s event when they are serving finger sandwiches and petit fours. I mean come on, you need to eat 7 or 8 of them to be remotely satisfied. Tonight my husband is out so I am having some girlfriends over for dinner and decided to make a nice big salad. It’s refreshing and filling yet figure friendly. We will call this recipe “Salad for the Ladies.” But if the guys were here I bet they’d eat it.
big bunch of mixed greens
4 grilled chicken breasts
5-6 sundried tomatoes
1/2 red onion, diced
1/2 cucumber, chopped
1/4 c. dried fruit (I used craisens)
4 oz goat cheese
1/4 c. crushed pecans
Cut the goat cheese into about 1/2-1 inch chunks. Roll each chunk in the crushed pecans so the surface is well covered. Cut the chicken into strips. Place the mixed greens on a large serving platter, top with the chopped vegetables, goat cheese, and chicken. Add croutons if desired. Any kind of vinagrette dressing goes well.
