 Here are a couple more recipes of things I brought camping over the weekend. After a late girls night on Friday, lets just say we were a little “foggy” Saturday morning. We couldn’t quite figure out how to work the convection oven in my friend Linda’s camper. Finally we got it working but I think we accidently baked the quiche on Preheat. Ooops! It still turned out okay for the most part and definetly helped us feel a little better. Recipe
Serves: 8
12 eggs
1 c. whole milk
3 reg. sausage links, removed from casing, cooked, and cooled
1/4 c. diced tomato
1/4 c. diced onion
1/4 c. diced bell pepper
fresh rosemary
1/2 c. shredded cheddar cheese
3 flour tortillas
Line a pie plate with the tortillas ( it’s ok if the don’t fit perfectly.) In a mixing bowl, whisk together the eggs and milk until fluffy. Add sausage, veggies, rosemary, and cheese. Stir til combined. Pour egg mixture into tortilla lined pie plate. BAKE at 350 for about 30 minutes.
