In the wake of Hurricane Sandy, Jimmy and I are finally packing up and hauling out- across the street to my sister, Julie’s house that is. We are crashing with her, my brother-in-law, Joe, and their yellow lab, Millie for the next couple months. During which, our house will be demo-ed down, down to the ground and completely rebuilt. Should I be scared? Nervous about this new endeavor?! It’s a lot to take on and I’m already overwhelmed!
Take for instance, dealing with bass-ackward zoning and coding enforcement officers who require permits for everything… EVERYTHING… oh you want to hang a curtain rod? You need a permit for that!!! I’ll be available 6 weeks from now to issue it. Have your checkbook handy.
Then there’s the classic battles between husband and wife- you know, the kind that take place mid-aisle of a Home Depot. Now, I know marriage takes compromise, but try compromising on roofing… siding… exterior doors… interior doors… door bells, for crying out loud… windows… paint color… wood flooring… tile flooring… carpet… trim… cabinets… countertops… appliances… lighting… fixtures, all within a period of just a few weeks. I think the socially acceptable rule for married couples building houses should become- men get to decide on things like septic systems and women get to decide on everything else.
More to rack my nerves is this projects fiscal situation. I’m used to equating teaspoons to tablespoons, not balancing a budget for new home construction.
And also… what’s even more of a threat, is moving in with my sister… my little sister! The last time we co-habitated, I was 5, she was 3. She moved into my big girl room from her nursery. I made all the rules, I did not share my toys, and believe it when I tell you, I charged rent money straight from her piggy bank. Ten cents a month to be exact. Oh boy, karma is going to bite me in the butt on this one. Maybe if I keep her kitchen stocked with baked goods she’ll forget about what a brat I was growing up. I’ll start with these Irish Potato Candies.

1/4 c. butter, room temp
4 oz. or half a pkg cream cheese
1 t. vanilla
4 c. confectioners sugar
2 1/2 c. coconut flakes
With a stand mixer or electric mixers, cream together the butter, cream cheese, and vanilla. Mix in the confectioners sugar 1 cup at a time (it may seem like its not blending in at first, but keep mixing and eventually it will.) Then mix in the coconut flakes. Chill in fridge for about a half hour. Using clean hands, roll Tbsp-fulls of the mixture into mis-shaped balls. Then dust them all in cinnamon. I placed each one in a mini cupcake wrapper.
