The past two months I’ve been without a working kitchen. Lord, help me…. Thankfully, my Momma had been kind enough to occasionally lend me her kitchen from time to time. Last week I asked her if, while she wasn’t home, I could borrow her oven to bake off some cupcakes. She said, “Sure, but can you feed the cows while you’re there?”
No problem.

Recipe
For the icing:
1/2 c. butter (at room temp)
1- 8 oz. pkg. cream cheese (at room temp)
1 t. vanilla
1 T. water
4 c. confectioner’s sugar
For the cake:
1 T. blue food coloring
2 T. cocoa powder
1 box white cake mix
Buttermilk, enough to replace the water amt required for cake mix (usually about 1 cup)
For the cake, prepare the boxed cake mix according to package directions, but substitute the water amount with buttermilk. Stir in the cocoa powder and food coloring. Pour batter into paper lined cupcake tin and bake per package directions. For the icing, using a stand mixer or electric mixers, cream together butter, cream cheese, water, and vanilla. Slowly mix in confectioners sugar and continue mixing until well combined. Once cupcakes are cool pipe on icing and decorate.
