That moment on December 21, 2012 at 2:48 AM, when you mix up batter for cupcakes, realize you’re out of cupcake wrappers, and think to yourself omg the world IS coming to an end!!!
Recipe
Yield: 24 cupcakes
For the cake
1 c. butter
2. c. sugar
3. c. flour
4 eggs
1 t. vanilla
1 T. baking powder
1/4 t. salt
1 c. milk
For the icing
1 c. butter, room temp
4 c. sugar
1 t. vanilla
3 T. rum or bourbon
nutmeg
For the cake, using a stand mixer or electric mixers, cream together the butter and sugar. Add eggs and vanilla and continue mixing. In a separate bowl combine the flour, salt, and baking powder. Mix the dry ingredients into the wet ingredients alternating with the milk. Fill cupcakes pans lined with paper wrappers making 24 cupcakes.
For the icing, with a stand mixer or electric mixers, cream the butter with the vanilla extract and rum. Gradually add in the sugar and continue mixing til well combined. Once cupcakes have cooled, top with icing and sprinkle with nutmeg.
If it has to end, I’d like to be eating that cupcake at the time (with a side of Parrot Bay rum).
Haha oh my gosh baking cupcakes at 2AM is probably the best thing I have heard all week. These look amazing. I made some eggnog cupcakes yesterday!
