The past few weekends, Jimmy and I have been enjoying our sacred place, our utopia- The Sandbar. If you’ve been to the sandbar then you know what a glorious piece of earth it is, but for those of you who haven’t had the luxury of going there, let me explain… The Sandbar is a shoal located in the bay near Shooting Thorofare and the Little Egg Harbor Inlet. It surfaces at low tide and submerges itself at high. It is a place that can only be reached by boat and, even better, a place that is only ever reached by locals. It’s a beach of beautiful, pure, soft, white sand. It’s a beach where, during these few precious months of summer, the sun is always hot, the breeze is always cool, and the baywater is always crisp and refreshing. It’s a beach where beer fits in like a Corona commercial. It’s a beach where the livin’ is easy. If you take look around there you’ll see little kids playing in the sand, a dog or two frolicking in the surf, and the boats of those you love shored off the bar with anchors. You’ll see bright-colored beach chairs, iced-up coolers, and an explosion of flip-flops. There’ll be BBQs, and frisbees, and fun. You’ll hear the sounds of seagulls, and jetskis, and country radio. At The Sandbar… you’ll smell summer. You can close your eyes and be completely at ease. You’ll feel as though you haven’t a care in the world. Then, just when you think you may have died and gone to heaven, you’ll hear a little girl yell, “Mommm!! That brown dog just threw up a bunch of seaweed and then this yellow stuff came squirting out of his butt!!!!” Ahh the joys of saltwater.
Recipe
1 pkg hotdogs
8 8inch flour tortillas
1 jar salsa con queso (the cheesy salsa in the chip aisle)
1 8 oz. pkg shredded cheddar cheese
Spread about a Tbsp of the salsa con queso on each tortilla, covering the entire surface of one side. Then, sprinkle a small amount of shredded cheddar cheese overtop of that. Roll a hotdog up tightly in each tortilla and place seam side down. Grill the tortilla wrapped hotdogs until char marks are present, cheese is melted, and dogs are cooked through, about 7 minutes.
How can you eat like a football player and look like a cheerleader? It’s not fair but that’s life and you are blessed!
