Crabmeat Stuffed Mushrooms

 

Greetings from Key West! Jim and I are camping in the Florida Keys this week with our great friends, The Haines’s- Don, Linda, and their two sons, Brandon and Justin. The weather is gorgeous, the atmosphere is beautiful, and the drinks have been flowing… but, what I’m enjoying most about this vacation is the opportunity to cook alongside Big Daddy Don. Those of you who have experienced his gourmet grilling know what an amazing cook he is, but for those of you who haven’t, let me put it simply- Don is the kind of chef who could send Bobby Flay home crying to his mommy. Actually, if Bobby Flay tasted Don’s food, he would not only cry to his mommy, but he would most likely retire from the cooking industry altogether out of pure embarrassment, enroll in a self-help group, and resort to eating Swanson’s Salisbury Steak for dinner every night. LOL. Anyway, we have been BBQ-ing it up here at Blue Water Key RV park. These Crabmeat Stuffed Mushrooms are one of the things we made…

Recipe
24 mushrooms
1 lb. lump crab meat
1 egg
¼ c. breadcrumbs
2 T. mayo
½ red pepper, finely diced
¼ red onion, finely diced
1 garlic clove, finely diced
few pinches of oregano
pinch of crushed red pepper
S&P

Combine all ingredients except the mushrooms in a mixing bowl. With clean hands shape a walnut size portion of the mixture and place it on top of each mushroom, gently packing it down. Grill mushrooms for about  20 minutes, so mushrooms are soft and egg sets. You could also bake them in an oven at 350.

  1. I used to live in Key Largo and often went to Key West on day trips. I know you must be having a great time. The mushrooms sound terrific. Have fun!
