Gingerbread Cookies

It’s December 1st…. Christmas cookies are GAME ON!! First up, Gingerbreadmen.

Recipe
Cookies-
1/4 c. butter
1/4 c. shortening
1 egg
1/3 c. molasses
1/2 c. brown sugar
2 1/4 c. flour (plus extra for rolling dough)
1/4 t. baking soda
1/4 t. salt
2 t. ginger
1 t. cinnamon
1/2 t. nutmeg
Icing-
1 c. confectioners sugar
2 T. water
1 T. meringue powder

Using a stand mixer or electric mixers, cream butter, shortening, and sugar. Mix in molasses and egg. In a separate bowl combine dry ingredients. Gradually add the dry ingredients to wet ingredients and continue mixing until dough forms. Let dough chill in fridge for about an hour (don’t skip this step, it makes it a lot easier to roll out dough.) Once chilled, dust work surface with flour. Using a rolling pin, roll out dough to about a 1/4 inch thickness. Use cookie cutters to shape cookies. Place cookies on ungreased baking sheet and bake at 350 for about 5-7 minutes. For the icing, beat confectioners sugar, water, and meringue powder until well combined. Use a piping bag to decorate cookies.
