Lemon Poppy Seed Cupcakes

As I was stirring the poppy seeds into this cupcake batter, the age-old question came to my mind: can eating poppy seeds cause a person to test positive on a urine drug screen? I decided to give it a google to find out if this is indeed fact or fiction. During my research I came across the website for The Discovery Channel’s Myth Busters. Myth Busters put this to the test by feeding two subjects poppy seeds then drug testing them at half hour intervals. Subject #1 was fed an entire loaf of poppy seed cake while Subject #2 was fed just 2 poppy seed bagels. They were then administered drug tests at half hour intervals and low and behold both tested positive!!! Subject #1 tested positive on the first test (1/2 hour after consumption) and Subject #2 tested positive on the fourth test (2 hours after consumption.) However, I also must report that on a drug test administered the following morning both subjects tested negative. So in conclusion, it’s true!!… and on that note I should add that if you work for an employer who performs random drug testing you probably should not try this recipe… but if not- ENJOY!

Recipe

1 box vanilla cake mix (prepared using package directions)

1 lemon, juice and zest

1/2 T. poppy seeds

prepared vanilla cake icing

Prepare cake mix according to package directions, however displace some of the water with the lemon juice. The easiest way is to juice the lemon into the measuring cup, then fill the measuring cup the rest of the way until you reach the total amount of water that the cake mix calls for. Next stir lemon zest and poppy seeds into batter. Pour batter into a paper-lined cupcake tin. Bake per package directions. Let cool, frost, and garnish with lemon rinds.
