Key Lime Pie Cupcakes

Recipe
Yeild 24 cupcakes
 
Cupcakes-
1 box vanilla cake mix
zest of 1 lime
 
Icing-
1 c. crisco
1 lb. confectioners sugar
1 t. vanilla extract
2 T. water
zest of 2 limes
green food coloring
2 graham crackers
 
Prepare vanilla cake mix following package directions. Stir in zest of 1 lime. Line cupcake tin with papers and fill 2/3 full with cupcake batter. Bake according to package. In the meantime, using a stand mixer or electric mixer, mix togther crisco, vanilla, and water. Gradually add confectioners sugar. Then mix in the lime zest and green food coloring. Once cupcakes have cooled frost with icing and decorate with crushed graham cracker crumbs.
